Indulge in a wonderful Lavander wonderland with this yummy ice cream recipe.
Again with lavander and again with ice cream. This is a lovely treat for the midweek blues.
It is an easy-to-make custard based lavander infused treat.
As always, use loose tea (available in Teas.com.au) for best results.
INGREDIENTS:
1 cup thick cream
1 cup milk
4 egg yolks
1/2 cup castor sugar
3 tsp Lavender tea
2 tsp lemon juice
1 tsp Lavender (optional for garnishing)
EQUIPMENT:
small saucepan
mixing bowl
fine sieve
ice cream maker
DIRECTIONS:
In a saucepan, simmer thick cream and milk in low heat.
Add 3 tsp Lavender to the milk mixture and let simmer for 5 minutes.
Turn off the heat. Set aside covered for another 5 minutes.
In a mixing bowl, whisk egg yolks and sugar until very creamy.
Then add this egg mixture to the lavender infused milk mixture until throughly combined.
Place the saucepan with the mixture over low heat but never allow it to boil by stirring constantly until it thickens. You know it is thick enough when it can cover the back of the wooden spoon or spatula without dripping.
Pour the ice cream mixture into a bowl through fine seive removing the lavender.
Allow mixture to cool then put in the fridge to chill for at least 4 hours covered.
Pour the chilled mixture into an ice cream maker.
Add the 2 tsp lemon juice before churning to balance the lavender taste.
Churn.
If preferred, garnish with 1 tsp lavender into the ice cream mixture.
Eat the ice cream and enter Lavender wonderland.
